Ingredients Serving: 4

  1. 2 Cups Black beans or Rajma
  2. 1 large chili - chopped finely
  3. 1 cup chopped capsicum
  4. 1 large onion - chopped finely
  5. 1 cup crushed tomato
  6. 1 cup Tomato puree
  7. 1 tablespoon- Red chilli powder
  8. 1 bay leaf
  9. Oregano 3 teaspoons

Instructions

  1. Boil the beans in a pressure cooker until soft.
  2. In a pan heat some oil and add a bay leaf and saute; add the chopped onions and capsicums and saute well.
  3. When the onions turn translucent, add the crushed tomatoes and tomato puree.
  4. When this boils add salt , chilli pepper and oregano.
  5. Serve with tortilla chips, fresh corn kernels and shredded cheddar cheese.
