Eggless Colour Pencil Cookies

Ingredients to make Eggless Colour Pencil Cookies

  • 3/4 cup Butter
  • 1 cup Icing sugar
  • 3 tbsp Curd
  • 1 tspVanilla extract
  • 2+1/2 cup All purpose flour
  • 1/2 tsp salt
  • Food colours as per need

How to make Eggless Colour Pencil Cookies

  1. Line up a baking tray with baking sheet and keep aside. Pre-heat oven to 350F. Sift together flour and salt and keep aside.
  2. Add butter and icing sugar together in the bowl of your electric beater. Beat on medium speed until the mixture becomes creamy.
  3. Add the curd, vanilla extract and beat again until combined. Now add the flour and beat on slow speed until flour gets well mixed. Do not over beat. Use your hands to bring the dough together and divide into two halves.
  4. Divide again one of the half dough into 4 equal sized portions. Add drops of different colours to each of the portions of dough.
  5. Knead well the colour to the dough completely.
  6. Dust the work surface with flour and roll the uncolored portion of the dough into a rectangle. Pinch out 2 to 3 small sized portions of each coloured dough and make a sausage like log of 3 mm diameter 4 to 5 inches long.
  7. Place each coloured sausage in one corner of the uncolored rolled out sheet of dough. Wrap the coloured dough and close it well with the uncoloured dough.
  8. Cut it where it covers and pull it to work. Roll it smoothly using your fingers and seal well the edges.
  9. Repeat the same with the remaining dough. Transfer them carefully to the already prepared baking tray. Bake in the preheated oven for 15 minutes. Cool on wire rack.
  10. Let it cool completely.
