A reduced milk dessert.

Milk Halwa

Ingredients to make Milk Halwa

  • 2 litre milk
  • 3 tbsp sooji
  • 7-8 tbsp sugar
  • 3/4 cup ghee
  • cardamom (elaichi) powder 1 teaspoon
  • lemon juice - few drops

How to make Milk Halwa

  1. Dry roast the suji and keep aside.
  2. Boil the milk in a heavy bottomed pan and allow it to reduce. Stir in between and keep on checking.
  3. Reduce it to 1/3 of the quantity and then add the roasted suji/rava, mix well.
  4. Add sugar and stir to incorporate the sugar nicely. Then add half of the ghee. Mix and add lemon juice, stir and let it boil, it will thicken a little more.
  5. Now add the half of the ghee. Mix and cook till the halwa starts leaving the sides of pan.
  6. Add cardamom powder, mix and turn off the gas.

My Tip:

Use a heavy bottom pan for reducing the milk and then transfer it to non stick pan for further cooking.
