Ingredients to make Idiyappam/Nool puttu/Rice hoppers

  • Rice flour 1 ½ cups
  • Oil 1 tbp + 1 tbsp or more for greasing
  • Coconut scrapings- as needed (optional)
  • Water and salt as needed

How to make Idiyappam/Nool puttu/Rice hoppers

  1. Take a large bowl. Add in the rice flour and salt, mix well. Take 1 1/2 cups of water in a pan and bring to a boil.
  2. Once it starts bubbling switch off the flame. Add the water slowly into the bowl. Mix well.
  3. Once it is roughly mixed, close the vessel with a lid and keep it undisturbed for 5–10 mins. The flour will become half cooked.
  4. Once the dough is cooled add a tbsp of oil (more oil could be required. Depends on the brand of rice powder you are using).
  5. Knead the dough till it comes together and attains a soft and smooth texture.
  6. Now take a portion of the dough, insert it into an idiyappam presser and press it. Pour the noodles into the moulds/tray/idli mould in a circular motion.
  7. Steam it in a cooker or steamer for 8- 10 mins.
  8. After 10 mins open the lid, lift the tray and keep it undisturbed for few minutes.
  9. After that if we are able to remove it from the mould easily, it means idiyappams are cooked well. Serve it with stew or curry of your choice.
My Tip: 1 Dont forget to grease the tray or mould with oil ahead 2. Note:steamer has 2 portions Bottom portion :where water is added Top portion:where we stack 3 set of trays one above the other
