Moru Curry (Kaalan)

Ingredients to make Moru Curry (Kaalan)

  • 500 ml Buttermilk
  • 1 cup chopped Papaya/Cucumber/Ash gourd
  • 1/4 cup grated coconut freshly grated
  • 2 + 4 small sized onions chopped
  • 2 dried red chillies
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon fenugreek seeds
  • 1/4 teaspoon tumeric powder
  • 2 cloves of garlic
  • 6-7 curry leaves
  • 2 tablespoon oil
  • 1 cup water
  • Salt according to taste

How to make Moru Curry (Kaalan)

  1. Grind the coconut, two small onions, cumin seeds and garlic together to form a paste.
  2. Wash and chop the onions and vegetable of choice.
  3. Take a pan/kadhai and pour in 1 tablespoon of oil, once heated put in the vegetable along with salt, turmeric powder and water.
  4. Cover with a lid and cook on medium flame till its cooked.
  5. Once cooked, lower the flame and add in the coconut paste and buttermilk. Stir this mixture thoroughly.
  6. Keep stirring and let the buttermilk become warm. Do not bring it to a boil.
  7. In the meantime, heat a separate pan with the leftover oil.
  8. Once the oil is heated, put in the mustard seeds and onions, saute this for a while.
  9. Next add in the curry leaves, fenugreek seeds and red chillies. Saute this mixture once again.
  10. Finally, pour in the butter milk mixture into this pan and give it a good stir so that they combine well together.
  11. Serve warm with freshly cooked rice.
