Mushroom Seekh Kebab with Mint Mayo

Ingredients to make Mushroom Seekh Kebab with Mint Mayo

  • 1 punnet (250 gms) Button Mushrooms
  • 8-10 Cherry Tomatoes
  • 1 large onion chopped in big chunks
  • 1 large bell pepper chopped in big chunks
  • For Mushrooms marination - 1 cup sour curd
  • 1 teaspoon turmeric powder
  • A pinch of asafoetida
  • 1 teaspoon dried oregano
  • 1 teaspoon red paprika powder
  • 1 teaspoon black pepper
  • 1 tablespoon Ginger - Garlic paste
  • 1 tablespoon corn starch
  • For tomatoes marination - 1 cup extra virgin olive oil
  • 1 teaspoon pepper
  • 1 tablespoon ginger garlic paste
  • Salt to taste
  • For mint mayo - 2 tablespoon mayonnaise
  • 1 teaspoon green chili sauce
  • 2 tablespoon finely chopped mint
  • 1 teaspoon salt and pepper

How to make Mushroom Seekh Kebab with Mint Mayo

  1. Wash, pat dry and prick mushrooms with a toothpick. Mix all the mushroom marinade ingredients and toss the mushrooms in it. Let it sit for at least 30-40 minutes
  2. Wash, pat dry and prick baby tomatoes. Mix all the tomato marinade ingredients and toss the tomatoes in it for at least 30-40 minutes.
  3. After marination preheat the oven grill on 180 for 10 minutes. Insert a rotating skewer in vegetable one after another. Brush the excess marinade on top.
  4. Season with salt, pepper and oregano. Grill for 10-12 minutes or until sizzling.
  5. For the sauce combine all the dipping ingredients into a smooth paste. Serve hot with mint mayonnaise.

My Tip:

Paneer and other veg and non veg ingredients can be added to this recipe. As per to one's liking.
