Ingredients Serving: 6

  1. All purpose flour 1 cup
  2. Gram flour 1 tsp
  3. Cornflour 1 tsp
  4. Curd 2 tsp
  5. Sugar 1 cup
  6. Water 1/2 cup
  7. Cardamon powder 1 tsp
  8. Saffron strands 8-10
  9. Kesar orange food colour 1/2 tsp(optional)
  10. Ghee for frying 2 cups
  11. Lemon juice 1/2 tsp
  12. Pistachios sliced 2 tsp

Instructions

  1. In a bowl,mix all purpose flour,gram flour,corn flour,curd and make a flowing consistency by adding little water...
  2. Allow it to ferment for 12 hrs.Fermentation may take more time in winters.. around 18-24 hrs.
  3. Add orange food colour to the batter and whisk the batter before using...if the batter is thin,add little all purpose flour and if the batter is thick...add very little water...and mix properly ..
  4. Meanwhile add sugar and water to a pan..allow it to boil..
  5. Add lemon juice to avoid crystallization..
  6. Add cardamom powder,saffron strands and wait till you get sticky and one strand consistency..
  7. Keep the syrup warm until you make jalaebi..
  8. Heat ghee in broad base flat pan ...
  9. Transfer the batter into squeeze bottle
  10. Squeeze round spiral jalaebi in the medium flamed ghee..
  11. If the jalaebi is dispersed...then your batter must be thin...add little flour..
  12. Wait till they become crispy from both sides...
  13. Once done,transfer it in warm sugar syrup ...dip for few minutes till it soakes properly...
  14. Remove jalaebi and serve hot with rabdi...pistachios...
