Pesara Punugulu / Green Moong Fritters

Ingredients to make Pesara Punugulu / Green Moong Fritters

  • 2 cups : Green whole Moong
  • 1/2 cup : Rice
  • 2 tbsp : Finely chopped Ginger
  • 1 large : Onion finely chopped
  • Few Scallions / Green onions chopped
  • Few sprigs coriander chopped
  • Few curry leaves chopped
  • 8 to 10 nos : Green chillies crushed
  • Salt to taste
  • 2 tbsp : Coriander seeds
  • 1/4 cup : Rice flour(optional)
  • Oil for Deep frying

How to make Pesara Punugulu / Green Moong Fritters

  1. Wash and soak Green moong along with rice for atleast 6 to 8 hrs or until doubled in size.
  2. Later drain the water and grind them into slightly coarse paste adding as little water as possible.
  3. Now scoop the paste into a mixing bowl.
  4. Next add the chopped onions, Ginger, scallions, coriander, curry leaves, Coriander seeds, crushed green chillies and salt.
  5. Give this a good stir until well incorporated.
  6. Now start heating up the oil for deep frying the fritters.
  7. Drop in a spoonful of batter at a time like bhajiyas into the hot oil.
  8. Fry them on medium high heat until golden on all the sides.
  9. Later remove and drain on a paper towel and serve them hot with ketchup, green chutney or authentic Allam pachadi.
  10. Crispy exteriors with softer interiors are definitely a crowd pleaser. Make and enjoy.

My Tip:

Soaking the rice and dal for good 8 hours is essential, as well soaked grains require less water while grinding. Using very less water while grinding yields crispy fritters rather than oil soaked dumplings. By chance if your batter is loose, add the rice flour mentioned and mix well. You can add other veggies like chopped spinach, grated carrots etc for additional goodness.
