Bhendi Rai Khata

Ingredients to make Bhendi Rai Khata

  • Lady's finger chopped 1 cup
  • mustard Oil 1 and 1/3 tsp
  • turmeric 1/2 tsp
  • mustard paste 1 tbsp
  • tamarind juice 1/3 cup
  • jaggery 1 tbsp
  • Dry red chilly 2
  • curry leaves 7-8
  • Panch Phoron 1 tsp
  • salt to taste
  • water 1/2 cup

How to make Bhendi Rai Khata

  1. In a pan take 1 tsp Mustard oil, add Panch phoron and let it sputter. Add Lady's finger to it and fry for 2-3 min.Add Turmeric powder and salt to it.
  2. Cover the pan for 5 min, let lady's finger soften(90% cooked). Now open the lid, Add Mustard paste then Tamarind juice to it. Add water and cook for 5-6 min. Bhendi Rai Khata is ready!
  3. In a separate pan, heat 1/3 tsp Mustard oil. Add Curry leaves and Dry Red Chilly to the pan and toss for a min.Add it to above dish.Enjoy with steamed rice :)
