Wash the meat thoroughly and rub it with a little salt.
Put meat into a pressure cooker and let cook for 10 minutes. Note that there is no requirement for water.
After 10 minutes, switch off the heat. Once the pressure releases, separate the pork meat from the broth.
Take a pan/kadai and heat 4 tbsp of oil in it.
Put in the meat and fry it till it turns slightly brown in colour. This could take about 4-5 minutes or so.
After the meat is fried, take it out and keep aside.
In same kadhai, add in the green chillies to fry in the leftover oil.
Add in the curry leaves along with the meat, mushrooms, soya sauce, chilli flakes, garam masala and salt.
Cover and let it simmer and cook for 25-30 minutes.
Continue stirring and checking in between. Lastly add a dash of ajinomoto.
Serve warm with steamed rice for best taste.
