Egg Bake Casserole

Ingredients to make Egg Bake Casserole

  • 5 eggs
  • 2 large onions diced into medium sized cubes
  • 2 large tomatoes diced into medium sized cubes
  • ½ a bell pepper (green or red) cut horizontally into three
  • 2 breakfast sausages cut into thin slices
  • 3-4 strips of bacon chopped roughly
  • 2 green chillies chopped
  • 1 tsp Italian seasoning
  • 1 tsp white pepper
  • 3-4 tbsp milk
  • 1 cheese cube grated cheese
  • Salt to taste
  • Olive oil as required

How to make Egg Bake Casserole

  1. Crisp the bacon and sausage slices separately in a pan with very little oil, and set aside.
  2. In the same pan, add a little more oil and sauté the onions and green chilli till onions are transparent.
  3. Add the tomatoes and and stir briskly till tomatoes are just beginning to break up.
  4. Add the seasoning, salt and crisped sausage and bacon.
  5. Mix in and turn off heat.
  6. Whisk together the eggs, white pepper, milk and cheese with a little salt.
  7. In a glass baking try, empty out the sautéed mixture and spread well.
  8. Pour the egg mixture on top and spread evenly by tilting the tray.
  9. Microwave for about 5 minutes.
  10. Make slits in the bake and microwave two minutes.
  11. Make slits once more and microwave another two minutes.
  12. Cut into slices and serve hot.
My Tip: Crisping the sausage and bacon separately instead of cooking with the onions adds a nice crunch to the bake.
