ABOUT Azhagar Kovil Adai or Black Gram Dosai RECIPE

Azhagar Kovil is a temple situated on foot of Alagar hills North of Madurai. The main deity of this temple is called Alagar or Sundararajan. Azhagai kovil adai is a popular prasadam given in the temple. It is made of black gram and raw rice with a gist of pepper, ginger, jeera and curry leaves.

Ingredients Serving: 10

  1. Raw rice - 2 and 1/4 cup
  2. Black gram or Karuppu Uzhudhu (whole) - 1 cup
  3. Black pepper - 2 teaspoon
  4. Cumin seeds - 2 teaspoon
  5. Ginger - 1 inch piece
  6. Curry Leaves - a handful
  7. Ghee - to make the adai
  8. Salt - as needed or 1 teaspoon

Instructions

  1. Wash and soak the raw rice and black gram for 4 hours.
  2. Grind the rice and dhal to a thin rava consistency. (Do not add more water when grinding. The batter should be little thick only.) At the end, add salt and mix it well. Let it ferment for 4 to 5 hours.
  3. In a mixer jar, add the fresh ginger, pepper, cumin seeds, curry leaves and grind it coarsely. Now add the crushed masala paste and mix it well thoroughly.
  4. Heat a dosa pan and spread the batter similarly like how it's done while cooking adai dosai. Add ghee and cook on both the sides till it turns golden brown in colour.
  5. Serve hot with coconut chutney.
