Nutty Coconut Jaggery Ice cream

Ingredients to make Nutty Coconut Jaggery Ice cream

  • Heavy cream - 1 cup
  • coconut milk - 1 cup
  • Desicated coconut - 1/2 cup
  • almonds (chopped) - 1/2 cup
  • jaggery - 1/8 cup (If you like high sweetness desserts then can add a little more)
  • saffron - 1/2 tsp threads

How to make Nutty Coconut Jaggery Ice cream

  1. Whip the cream in a pan.
  2. In a separate pan, heat the coconut milk with jaggery until it melts. Add saffron and stir. Set aside to cool.
  3. After cooling, add this mix to the whipped cream.
  4. Add the almonds and desiccated coconut. Mix well.
  5. Pour this into a box. Freeze it for about 1.5 hours.
  6. Take it out and blend it again. Again pour it into the box. Let it sit in the freezer for 2 hours atleast.
  7. Scoop it out and serve.

My Tip:

Top it with Caramel sauce.
