Ingredients to make Shahi Tukda made of Rusk

  • Rusk 6
  • Milk 500 ml
  • sugar 6 tsp
  • cashewnuts broken 3 tsp
  • raisins 3 tsp
  • almond chopped 3 tsp
  • pistachios 2 tsp
  • cardamom Powder 1/4 tsp
  • cardamom pods 2 crushed
  • Few saffron strands
  • ghee 3 tsp

How to make Shahi Tukda made of Rusk

  1. In a pan add few drops of ghee and fry the nuts first till slightly golden and remove them in a bowl.
  2. Then fry the raisins for 2-3 secs. Remove them in the bowl and set aside.
  3. In a pan bring the milk to boil. Continue to boil till it is reduced to half quantity stirring it continuously which will take around 15 mins.
  4. When it is almost about to reduce to half, add the sugar, cinnamon pods, powder and the saffron strands.
  5. Mix well and let the sugar dissolve.
  6. Now slightly rub ghee on both sides of the Rusk.
  7. Take a microwave safe bowl and lay the Rusk over it in single layer.
  8. Microwave both side for about 30 secs. The Rusk should be golden hue.
  9. Now layer the rusk in a bowl.
  10. Add the roasted nuts all over it.
  11. Pour the thickened milk over it.
  12. Let it set for sometime in room temperature and serve as it is warm or you can refrigerate and serve chilled.

My Tip:

While you microwave the rusk please have a check before the mentioned timing as microwaves differs from one another in standard temperature. You can do this in tawa over the gas stove, apply the ghee and toast the rusk till slightly golden hue.
