Caramel Lassi Popsicles

Ingredients to make Caramel Lassi Popsicles

  • Hung curd 400 gms
  • Rabdi 600 gms
  • Grated coconut 1 cup
  • Powdered sugar 1/2 cup
  • Few cherries for garnishing cashewnuts for garnishing

How to make Caramel Lassi Popsicles

  1. In a muslin cloth hang the curd for a minimum of 30 minutes or till all the water from it drains away.
  2. In a mixing bowl, mix together sugar and curd.
  3. Now pour the rabdi in a Popsicle mould up to 1/3 rd portion and put in the refrigerator to set for a minimum 30 to 40 minutes.
  4. Now pour the curd mixture over to fill the mould and top it with shredded coconut and cashews.
  5. Keep in the refrigerator to set for minimum 3 hours or till it is perfectly set.
  6. Before demoulding the popsicle, immerse half of its length in normal water so that it can come out easily from the mould.
