Coconut Jello

Ingredients to make Coconut Jello

  • coconut Milk 1 cup
  • sugar 1/2 cup
  • water 1 cup
  • Veg Gelatin Powder/ Carrageenan 2 tsp
  • Vanilla essence 1/2 tsp
  • Fruit Syrup/Concentrate (Optional) 1/4 cup
  • Veg Gelatin powder for fruit jelly (Optional) 3/4 tsp

How to make Coconut Jello

  1. Mix fruit syrup/ concentrate with 3/4 tsp of veg gelatin.
  2. Bring this to a boil and simmer for 2-3 minutes on low heat, stirring continuously.
  3. Pour 1 tbsp of jelly mix into each ramekin to form a very thin fruit jelly layer.
  4. Refrigerate for 3-4 minutes to set.
  5. In a clean bowl, mix the water and 2 tsp of veg gelatin powder.
  6. Mix in all the remaining ingredients.
  7. Bring this mixture to a boil, stirring continuously.
  8. Continue to stir and simmer on low for 3-4 minutes.
  9. Set aside until it feels warm (not hot) and keep stirring occasionally.
  10. Pour this carefully over the partially set fruit jelly layer.
  11. Allow to set in the refrigerator for 10-15 minutes.
  12. Loosen the edges carefully with a blunt knife or spatula to pop the jello out.
  13. Dig into your yummy wiggly wobbly dessert.

My Tip:

The fruit jelly layer is optional but it does add to the ascetic appeal of the desert. I used rhododendron concentrate for that lovely pink. You can use rose/ strawberry for the same effect. You can prepare both the jelly layer mixes simultaneously. The fruit layer would set by the time the coconut mix becomes warm. Stirring the jelly mix throughout is very important to avoid the gelatin from settling down. Use a spoon to pour the coconut jelly mix starting from the edges. This way you won't break the lower layer and avoid air bubbles. The setting time can be reduced by half, using the freezer. I did this because my kids were too anxious to have it.
