Moong Sprouts and Vegetable Pulao

Ingredients to make Moong Sprouts and Vegetable Pulao

  • 1/2 cup moong sprouts
  • 1/2 cup chopped mixed vegetables (french beans, potatoes, tomato and cauliflower)
  • 1 cup uncooked long-grained rice soaked for 1 hour
  • 2 Tbsp ghee
  • 1/4 tsp cumin seeds (jeera)
  • a pinch of asafoetida (hing)
  • 1/4 cup finely chopped onions
  • 1/2 tsp finely chopped garlic
  • 1/2 tsp ginger-green chilli paste
  • 1/2 tsp turmeric powder (haldi)
  • 1/2 tsp chilli powder
  • 1/2 tsp garam masala
  • salt to taste

How to make Moong Sprouts and Vegetable Pulao

  1. Heat ghee in a pan and add the cumin seeds.
  2. When the seeds crackle, add the asafoetida, onions, garlic and ginger-green chilli paste, mix well and saute on a medium flame for 1 to 2 minutes.
  3. Add the mixed sprouts and spices, mix well and saute on a medium flame for 1 to 2 minutes.
  4. Add the mixed vegetables, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  5. Add 2 1/2 cups of water, let it boil, now add rice and mix well.
  6. Cover the lid and let it cook on low flame, till the rice done.
  7. Serve with raita or kadhi.

My Tip:

We can add more vegetables and mix sprouts to the pulao.
