Ingredients to make Anda Makhni

  • Spice mix :
  • peppercorns - 10
  • cardamom - 4
  • cloves - 6
  • cinnamon - 1
  • bay leaf - 2
  • almonds - 10
  • eggs gravy :
  • Boiled eggs - 6
  • Spice mix - 2 tbsp
  • Chopped onion - 1
  • tomato puree - 1/2 cup
  • cumin powder - 1/2 tsp
  • coriander powder - 1 tsp
  • ginger garlic paste - 1 tbsp
  • yoghurt - 2 tbsp
  • red chilly powder - 1 tsp
  • Kasuri methi - 1 tbsp
  • Refined oil/butter as needed

How to make Anda Makhni

  1. Roast the cloves, elaichi, cinnamon, pepper corns, bay leaf, almonds and grind them into a powder.
  2. Take some oil, heat and add the boiled eggs. Sprinkle some chilly powder. Fry and keep aside.
  3. Now in the same pan, heat some butter and refined oil. Add the chopped onions and fry till golden brown.
  4. Now add the ginger garlic paste, spice mix and rest of the powdered masalas, yoghurt and stir continuously. Cook.
  5. Add the tomato puree, kasuri methi and cook till done. Add water to make a gravy. Add the fried eggs and serve with a dollop of butter on it.
