Pineapple upside down cake

Ingredients to make Pineapple upside down cake

  • Refined flour(maida) - 250 gms
  • Condensed milk - 1 tin
  • Butter – 125 gms
  • Sugar – 6 tsp
  • Pineapple slices – 10
  • Club soda – 1/2 cup
  • Baking powder - 1 tsp
  • Baking soda – 1 tsp
  • Salt -a pinch
  • Yellow food colour – 1/2 tsp
  • Pineapple essence - 1/2 tsp
  • Glazed or fresh cherry – 6

How to make Pineapple upside down cake

  1. Take sugar in a pan & caramelize it, until sugar dissolves & turns into a golden brown syrup. Remove from heat & pour in the baking dish to coat the base evenly.
  2. Arrange pineapple slices over it, put cherry or walnut pieces in between the pineapple slices.
  3. Mix refined flour, salt, baking powder and baking soda & sieve twice. In a mixing bowl, add melted butter, essence, colour, condensed milk & mix well.
  4. Chop 4 pineapple slices into small pieces, mix in the butter & milk mixture. Add 2 tbsp flour mixture in the mixture & mix well.
  5. Add 2 tbsp of soda water & mix. The mixture should be of dropping consistency. Bake in a preheated oven at 170°C for 40-45 minutes.
  6. When ready remove from the oven & cool for 10 minutes. Run a sharp knife around the edges & then invert the cake onto your serving plate.
My Tip: Don’t allow the cake to be in the baking tin for more then 5 -10 minutes, otherwise the caramel becomes hard & will stick to the pan.

the cake should be inverted immediately after taking out of oven as it becomes difficult to dislodge the Cake once caramel cools down. and better still if u use baking paper it is even easier n neat
