Stuffed Capsicum rings

Ingredients to make Stuffed Capsicum rings

  • 2 large bellpeppers (red,green or yellow)
  • 3-4 boiled potatoes,mashed
  • 1 large finely chopped onion
  • 4 finely chopped cloves of garlic
  • 3/4 cup grated cheese(optional)
  • 1 tbsp Corn flour
  • 1 tsp red chilli flakes
  • 1 tbsp chopped coriander
  • 1 tbsp butter
  • 2.5 tbsp olive oil
  • salt to taste

How to make Stuffed Capsicum rings

  1. Cut the stem of the capsicums and remove all the seeds. Cut each hollow capsicum into 4 round rings, approx an inch in thickness.keep it aside.
  2. Heat 1 tsp olive oil in a frying pan and saute garlic to light pink.Add onions and fry till golden brown on a medium flame.
  3. Mix fried onions and mashed potatoes and add red chilli flakes,coriander and salt to taste.
  4. Add cheese and cornflour and mix well.the mixture should be thick enough to bind as a tikki.If not,add a little more cornflour.
  5. Make balls out of the potato mixture and fill the hollow capsicum by pressing it gently over a flat surface.
  6. Heat remaining olive oil and butter in a frying pan and shallow fry the capsicum on medium flame till light brown on both sides.
  7. Drain on absorbent paper.
  8. Serve hot with ketchup or green chutney.

My Tip:

Instead of frying,it can be grilled on both sides till golden brown.
