Pan seared Zeera Chicken

Ingredients to make Pan seared Zeera Chicken

  • 1.5 lbs chicken
  • 1 square inch piece of ginger julienne
  • 3/4 tspn zeera ( cumin ) seeds
  • 1/4 teaspoon freshly ground pepper
  • 2 chopped green chillies ( optional )
  • 1/4 teaspoon red chilli powder
  • 1 teaspoon dhanajira powder
  • 2 tbspns olive oil
  • Salt to taste

How to make Pan seared Zeera Chicken

  1. Heat olive oil on med / high in a large flat pan to the point where there is a sheen and sprinkle the zeera ( cumin ) seeds so they sputter.
  2. Remove from heat and add ginger evenly over the zeera.
  3. Lay the chicken pieces flat on zeera and ginger layer ( They should be touching the bottom of the pan ) and return to high heat.
  4. Sear the chicken for approximately 3-4 minutes on each side till golden brown.
  5. Turn down heat to medium and sprinkle the green chillies and dhanajira powder over chicken.
  6. Flip chicken pieces over and add red chilli powder.
  7. Continue to sauté for 2 minutes and add black pepper and salt.
  8. Partially cover and cook until chicken is done.
  9. Garnish with chopped cilantro ( dhania )

My Tip:

Mop up the leftover juices with bread once the chicken is gone... It's bursting with flavor ! And leftovers make delicious cold chicken sandwiches with salad leaves for lunch boxes.
