Chicken Baida Roti

Ingredients to make Chicken Baida Roti

  • 2 cups boiled and shredded chicken
  • 3-4 cups wheat flour
  • 1/2 cup maida/ flour
  • 2 eggs
  • Few stems of spring onions
  • salt to taste
  • 1/2 tsp pepper
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • Few coriander leaves
  • oil to shallow fry

How to make Chicken Baida Roti

  1. Season the shredded boiled chicken with salt, pepper, red chilli powder and garam masala. Mix it well together.
  2. Add the chopped coriander and green stems of the spring onion to the shredded chicken filling. Keep it in the fridge till use.
  3. Knead the flour mixing both wheat and maida together with some salt. Then grease the dough with a little oil and let it rest for 10 minutes.
  4. Beat the eggs well and add a pinch of salt.
  5. Make portions of the flour into 6 to 8 small sized dough balls. Then roll these balls into puri shapes and keep them in a tray dusted with some flour.
  6. Now take one of these puris, fill in the chicken mixture. Cover with another poori and roll out to shape a paratha.
  7. Heat a non-stick tava and grease it with some oil. Place the paratha and shallow fry it.
  8. Apply the egg wash with the help of a brush on the top side of the paratha, then turn it the other side and apply the egg wash again. Shallow fry and cook on both sides in a low flame.
  9. Golden brown parathas are ready to be served hot with any chutney of your choice.

My Tip:

Boil the chicken earlier and keep it to marinate with the ginger-garlic and salt to taste.
