ABOUT Chicken Roti John RECIPE

Roti John is a traditional Malaysian/Singaporean snack. It is best described as a crispy baguette, with the alluring fragrance from caramelized meat (i used chicken here in this recipe!) and onions wrapped into a beautiful parcel with golden fried eggs with ketchup mixture added as a finishing touch

Ingredients Serving: 2

  1. ½ a large baguette
  2. 100grams minced chicken
  3. ½ teaspoon cumin powder
  4. ½ onion (sliced)
  5. 3 eggs
  6. a pinch of black pepper
  7. 1 tablespoon sambal chili paste
  8. ¼ teaspoon salt
  9. 2 tablespoon oil
  10. 1 tbsp minced garlic
  11. 50 mili litre Ketchup sauce
  12. 2 tablespoon ketchup
  13. 2 tablespoon chili sauce
  14. 2 tablespoon water
  15. 1 tablespoon sugar

Instructions

  1. Toast baguette slightly and make a cut in the center and spread it open
  2. Add ½ teaspoon cumin powder to chicken mince and mix well
  3. In a hot pan add 2 tablespoon oil with 1 tablespoon minced garlic
  4. Next add in sliced onions, cook on low heat till onions become translucent
  5. Add in the chicken and stir fry
  6. Crack 3 eggs, add sambal chili paste and ¼ teaspoon salt, mix well
  7. Mix 2 tablespoon ketchup, 2 tablespoon chili sauce, 2 tablespoon water and 1 tablespoon sugar together in a bowl
  8. Spread onions and chicken evenly on the pan and pour in egg egg mixture
  9. Place the baguette skin side up and spread on top of the egg so that it soaks it up
  10. Press the baguette down and cook for 2 minutes
  11. Flip and remove baguette from pan, spread ketchup mixture in the center.
  12. Fold it back up and slice into small piece with a bread knife.
