The origin of this dish is from the sichuan province of China, this hot peppery egg fried rice with the Korean accompaniment tofu in burnt red pepper garlic sauce is a sure hit in your parties.

Ingredients Serving: 2

  1. Szchewan egg fried rice Ingredients:
  2. Boiled rice 3 cups (preferably long grain)
  3. Carrot, French beans, Cabbage, Bell Pepper Juliennes 1 cup
  4. Spring onions 1/4 cup
  5. Scrambled eggs 1 cup
  6. Red chillies 7-8, soaked in warm water
  7. Szechwan pepper 1-2 tsp, crushed
  8. Red chilli sauce 3 tsp
  9. Soya sauce 3 tsp
  10. Vinegar 1/2 tsp
  11. Sugar 1 tsp
  12. Salt to taste
  13. Oil 3 tsp
  14. Ginger, Green chillies and Garlic, finely chopped 2 tsp
  15. Tofu in burnt red pepper garlic sauce Ingredients:
  16. Tofu 200 gms
  17. Garlic and Ginger, finely chopped 2 tsp
  18. Scallions 1/4 cup
  19. Red bell pepper 1 large size
  20. Chilli sauce 1 tsp
  21. Soya sauce 1 tsp
  22. Sugar 1/2 tsp
  23. Salt to taste
  24. Pepper crushed 1-2 tsp
  25. Oil 3 tsp
  26. Corn flour 3 tsp
  27. All purpose flour 3 tsp

Instructions

  1. To prepare the szechwan egg fried rice, grind the soaked red chillies into a paste.
  2. In a wok, add oil to heat, saute in the finely chopped green chillies, garlic and ginger with a spoon of sugar in a low flame. Next add the white part of the spring onions. Saute for a minute or two.
  3. In low flame, add in the red chilli paste, red chilli sauce and soya sauce. Allow it to cook taking care not to burn it.
  4. Once it's done add in the julienned vegetable and scrambled eggs. Give it a nice toss in a high flame for 2 minutes.
  5. Now add in the rice, salt and crushed szechwan pepper. Toss this for 2 minutes.
  6. To prepare the tofu in burnt red pepper and garlic sauce, coat the tofu in all purpose flour and corn flour with salt. Then shallow fry them.
  7. Apply a little oil on the red bell pepper and burn it in a direct flame until the outer skin starts to change colour. Then cool and cut the bell pepper. Deseed it.
  8. Make a paste of the burnt red bell pepper, chilli sauce and soya sauce together.
  9. In the same pan in which you shallow fried the tofu, add in the garlic and ginger and let it turn brown in colour.
  10. Next, add the scallions and saute it for 2 minutes along with sugar. Now add in the bell pepper paste. Allow it cook until it starts to boil.
  11. Add the fried tofu and serve it hot along with the rice.
