Desi fondue with Accompaniments

Ingredients to make Desi fondue with Accompaniments

  • For the Fondue:
  • Maida/ Refined flour - 3 tbsp
  • Lasun/Garlic flake - 1
  • Milk - 1 glass
  • cheese cubes - 4
  • Butter - 2 tsp
  • 2 tsp - tomato ketchup
  • 1 tsp - pavbhaji masala
  • Garam masala powder - A pinch
  • For Nachos at home:
  • 250 gms - Maize flour (makkai atta)
  • 3 tbsp - maida/refined flour
  • Carom seeds - 1tsp
  • Oregano - 1 tsp
  • a pinch of hing
  • oil for deep frying
  • salt to taste

How to make Desi fondue with Accompaniments

  1. Fondue: Heat a heavy bottom pan, rub a garlic clove into it. Put butter plus a little oil this will prevent burning of butter. Add maida saute till the aroma comes & the colour changes to light pink all on a slow flame.
  2. Add in the milk then cheese cubes, stir it till it thickens. Put off the flame. Add 2 tsp of tomato ketchup into it. Add pav bhaji masala and garam masala. Give it a nice mix. Done
  3. For the Nachos: Mix all the mentioned ingredients with 2 tbsp oil and make dough like rotis, give rest for at least 10 minutes, make round shape rotis then cut into diamond shape. Pierce them with knife all over.
  4. Deep fry them on medium to high flame till the colour changes to golden & and it turns crisp.
  5. Salad: Carrots, capsicum, cucumbers cut lengthwise. Saute mushrooms in butter with salt & black pepper powder. You can blanch the baby corns & broccoli too.
  6. For buttered pav: Cut pav into cube shapes. Saute in butter.
My Tip: As we all know fondue is to b eaten piping hot or else it would thicken. Use microwave oven to reheat it if necessary.
