Berry Orange pistachio biscotti

Ingredients to make Berry Orange pistachio biscotti

  • Vegetable oil 10 ml
  • Castor sugar 80 g
  • Vanilla extract 1 tsp
  • almond extract 1/4 tsp
  • egg 1
  • all purpose flour 200g
  • Orange zest 1 tbsp
  • Baking powder 1/2 tsp
  • Dried berries 50 g
  • pistachio + nuts 300 g

How to make Berry Orange pistachio biscotti

  1. Preheat oven to 150 degrees Celsius .
  2. Mix oil, sugar and extracts in a big bowl.
  3. Beat egg in bowl and mix well.
  4. Add flour and baking powder, zest and combine gently.
  5. Add nuts and berries and mix by hand.
  6. The dough will be sticky. So wet your hands slightly to handle the dough.
  7. Form a smooth log out of the dough, and place it on a baking tray lined with parchment paper.
  8. Bake for 35 mins or till it is light brown.
  9. Allow it to cool and then cut log into 1/2 inch thick pieces diagonally.
  10. Place them sideways on tray again and bake at 140 degrees Celsius for another 15 mins .

My Tip:

Add a pinch of salt if pistachios are unsalted. The oven temperatures vary vastly. You might need to bake for a longer time. Keep biscottis on a parchment paper.
