Pineapple Upside Down Cake

Ingredients to make Pineapple Upside Down Cake

  • 120 gms refined flour
  • 120 gms castor sugar
  • 120 gms butter
  • 2 eggs
  • 2 tbsp pineapple juice (from tinned pineapples)
  • 6 - 7 pineapple slices (tinned pineapple)
  • 1/2 tsp baking powder
  • 1/4 tsp pineapple essence
  • 3 tbs golden syrup (3 tbs sugar and 1 tbs water, boil till golden in colour)
  • 7 -8 tinned cherries

How to make Pineapple Upside Down Cake

  1. Grease a 6“ cake tin and line bottom with butter paper. Arrange pineapple slices on the base and pour golden syrup over it.
  2. Cream butter and sugar. When fluffy, beat in eggs one at a time.
  3. Fold in sieved flour and baking powder. Add pineapple essence. Add some pineapple juice to get soft dropping consistency.
  4. Pour into tin and bake at 150° C for about 45 mins or till toothpick inserted in the centre comes out clean.
  5. Invert on tray after cool and decorate with cherries.

My Tip:

Do not use fresh pineapple as it tastes bitter. Use only tinned/ canned pineapples.
