  • For dressing-
  • 2 tbsp extra virgin olive oil (pure)
  • 1 garlic minced
  • 1/2 tsp Oregano
  • 1 tsp Black pepper
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar (optional)
  • salt to taste
  • 1 tsp sugar or 1 tbps honey
  • 20 gms cottage cheese
  • Fruits and veggies - chopped and quantity as per choice
  • Water chestnut (boiled)
  • apple
  • Orange
  • cucumber
  • onion
  • tomato
  • Beans- Boiled
  • 3 -4 tbs Black eyed beans
  • 3-4 tbsp red beans

How to make Greek Water Chestnut Fruits And Beans Salad With Cottage Cheese

  1. Boil water chestnut and cut into small cubes. Keep aside for cooling. First, chop all fruits and vegetables at the time of making the salad.
  2. In a big bowl, keep all chopped fruits and veggies and mix lemon juice.
  3. Mix all dressing ingredients in bowl without lemon juice.
  4. Meanwhile, lightly roast cottage cheese with a little salt and pepper. Keep to cool
  5. Chop cheese into small cubes.
  6. Mix all the ingredients together and adjust seasoning according to your Taste.
  7. Serve immediately chilled or at room temperature at any time of day

My Tip:

If you want chilled salad then use fruits kept in the fridge. Don't keep chopped fruit more than 1 hour.
