Ingredients to make Rich Dry Fruit Cake

  • 1/2 bowl chopped dry fruits(raisins,dates,apricot,cherries,cranberries) soaked into rum for 1 day
  • 2 cups maida
  • 4 eggs
  • 2 cup brown sugar
  • 2 tsp baking powder
  • 2 drops vanilla essence
  • 1/2 tsp cinnamon powder
  • 1/2 tsp cloves powder
  • 1/2 bowl roasted cashew
  • 80 gm butter
  • rum for brushing

How to make Rich Dry Fruit Cake

  1. In a pan add sugar and butter together.Heat up the pan.Pour a little water.Switch off the flame after caramelizing.
  2. Keep it aside to be cooled.
  3. Sift maida and baking powder in a bowl. Add cinnamon, cloves powder into it.
  4. Now after cooling,add 1 by 1 egg into sugar mixture and mix well.Add vanilla essence.
  5. Mix this liquid mixture with dry mixture well and fold well.
  6. Mix rum soaked dry fruits and cashew in this mixture.
  7. Now bake this in a preheated oven for 40-45 mins at 165 degree C
  8. after cooling brush rum gently on cake.
  9. Serve.

My Tip:

Sprinkle some maida on dry fruits and then mix into batter.
