Vegetable Golden Coins

Ingredients to make Vegetable Golden Coins

  • Bread - preferably wheat bread - 16 slices
  • Melted butter - 1/4 cup for greasing on the bread
  • Boiled sweet corn - 1/2 cup
  • Baby corn finely chopped - 1/2 cup
  • capsicum finely chopped - 1/4 cup
  • onion finely chopped - 1/2 cup
  • Zucchini finely chopped - 1/2 cup
  • Panner cut into fine cubes - 1/2 cup
  • salt to taste
  • Oregano - 1/2 teaspoon
  • chilli flakes - 1/2 teaspoon

How to make Vegetable Golden Coins

  1. Take bread and cut it into round shape - all 16 pieces.
  2. Keep 8 pieces aside and for other 8 piece cut the thin round from inside to fill the mixture.
  3. Take a pan, add oil, add onion and saute it for 5 - 10 secs only, add other ingredients such as babycorn, sweet corn, paneer, zucchini, capsicum, salt and off the gas. Add oregano and chilli flakes.
  4. Take the full round 8 slices of bread apply butter and place the second round on it and press firmly. Then add sauted vegetables in between
  5. Make all 8 coins , brush little butter and keep it in preheated microwave for 10 mins at 180° or until it turns golden brown and is crisp.
  6. After the vegetable coins are golden brown, Serve hot with tomato sauce.

My Tip:

You can add any desired vegetables and infuse your desired flavours in it. You can even add grated cheese on the top and then bake it to give a cheesy flavour.
