ABOUT Spiced Mini Brioche Buns (Eggless & Yeast free) RECIPE

These soft melt-in-mouth buns are an all time tea time favourite. Here I have recreated the magic and that too without egg and yeast.

Ingredients Serving: 4

  1. Maida - 1 cup
  2. Wheat flour - 1 cup
  3. Buttermilk - 1 cup
  4. Baking pd.- 1tsp
  5. Baking soda - 1 tsp
  6. Salt - 1/2 tsp
  7. Sugar - 1/4 th cup
  8. Chilli pd.- 1 tsp
  9. Fennel (Saunf) - 1tsp
  10. Oil - 2 tbsp
  11. Milk - 1/2 cup
  12. Honey - 2tbsp

Instructions

  1. Whip buttermilk till frothy, add baking soda and leave for 5-10 min.
  2. Mix wheat flour, maida, baking pd and salt. Sieve 2-3 times. Keep aside.
  3. Gradually add the flour mix to the buttermilk. Add saunf, chilli pd and oil. Knead to a firm, soft dough till it doesn't cling to your fingers.
  4. Wrap in cling film and let the dough rest in a warm place for atleast 5 hrs.
  5. Thereafter, divide dough into equal small balls, flatten a bit. Arrange in a baking tray. Brush each bun with milk and honey mix.
  6. Bake in a pre heated oven@180 deg. for 20- 25 mins.
