Ingredients to make Pineapple upside down cake

  • 1 cup light brown sugar
  • 50g butter
  • 1 can pineapple sliced
  • Marschino cherries
  • For the cake:
  • 1 1/4 cup all purpose flour
  • 1/4 cup cake flour
  • 1 tsp Baking powder
  • 100g butter
  • 1 cup sugar
  • Pinch of salt
  • 3 eggs
  • 3/4 cup Milk
  • 1 tsp vanilla essence

How to make Pineapple upside down cake

  1. Boil butter and brown sugar together.
  2. Once it starts to caramelise,pour in the cake pan.
  3. Place pineapple slices over it.
  4. Add in the cherries if using.
  5. Set aside.
  6. Sieve the dry ingredients together.
  7. In another bowl blend sugar and butter until it becomes creamy.
  8. Scrap the sides often.
  9. Add in the yolks one at a time and blend well.
  10. Drop in the vanilla essence.
  11. Gradually add flour mixture alternately with milk, beating at low speed and scraping bowl often after each addition.
  12. Gently spread batter over pineapple.
  13. Bake 45 minutes or until a toothpick inserted comes out clean.
