Ingredients to make Chocolate Walnut cupcakes

  • All Purpose Flour 1 Cup
  • Vegetable/Canola oil 1/4 cup
  • White Sugar 1/2 Cup
  • Brown Sugar 1/2 Cup
  • Flax seeds 1 tbsp
  • Cocoa Powder 1/2 cup
  • Salt 1/4 tsp
  • Chocolate Chips 1/4 Cup
  • Walnuts 1/4 Cup chopped
  • Vanilla Extract 1 tsp
  • Baking Powder 1/2 tsp
  • Baking Soda 1/2 tsp
  • Buttermilk 3/4 cup

How to make Chocolate Walnut cupcakes

  1. In a bowl mix 1 tbsp flax seeds with 3 tbsp warm water and keep it aside for 5 min, until it forms a gluey paste.
  2. Preheat your oven to 350 degrees, line a 12 piece cupcake tin with liners and set aside.
  3. In a small bowl, combine the flour, cocoa powder, baking powder, baking soda and salt, set aside.
  4. In a large bowl, cream together the oil, both the sugars, add the flax seeds paste and vanilla extract. Whisk until smooth.
  5. Add the dry ingredients and mix just until they are almost all incorporated. Add the buttermilk, chopped Walnut and chocolate chips.
  6. Mix everything quickly so you don’t over mix.
  7. Using an ice cream scoop, fill your cupcake tin and bake for about 18 to 20 minutes or until a toothpick comes out clean when inserted in the center of a cupcake.
  8. After cooling down, drizzle chocolate syrup on top and serve.
