ABOUT Osh RECIPE

This is an Iranian dish. There are many versions of it. My friend Yasmin makes this beautifully and she shared her recipe with me.

Ingredients Serving: 6

  1. 1 kg mutton
  2. 5 onions
  3. 2 tsp cumin seeds
  4. 2 1/2 tsp ginger-garlic-green chilli paste
  5. 3 tsp of dhania-jeera powder
  6. 1 tsp turmeric powder and chilli powder
  7. 1 1/2 tsp salt
  8. 1/2 cup rice
  9. 1 cup chopped coriander
  10. 3 tbsp oil
  11. 6 to 8 cups water
  12. Equal quantities of the following-
  13. 2 1/2 cups of Masoor dal Chana daal Moong dal
  14. 2 1/2 cups of Black eyed peas (lobiya)

Instructions

  1. Soak the pulses for at least 4 hours if not over night. Cook the rice separately.
  2. Slice and fry the onions crisp. Drain oil & spread on tissue to absorb excess oil.
  3. In deep vessel heat oil on medium flame. Add jeera, and the ginger-garlic-green chilli paste and saute for a minute.
  4. Add mutton and stir fry for 5 mins. Add washed pulses and stir fry.Add dhania-jeera powder, haldi, chilli powder, 1 1/2 tsp salt and continue to sauté for 2- 4 mins
  5. Crush the fried onions & add to dal/mutton mix. Add 6-8 cups water. Put in pressure cooker, for 3 whistles, simmer till the meat is cooked
  6. When cooled, remove from the cooker to a deep pot. Add chopped coriander.
  7. Add the rice and simmer on low heat for 10 mins. You can add as much water as needed. It's nice to have it soupy.
