This is an Iranian dish. There are many versions of it. My friend Yasmin makes this beautifully and she shared her recipe with me.

Osh is a delicious dish which is liked by the people of every age group. Osh by Manini Badlani is a step by step process which is best to understand for the beginners. Osh is a dish which comes from Parsee cuisine and is very much popular throughout the worldwide This recipe is perfect to serve 6 people. You can find this dish at almost every restaurant and you can also prepare this at your home. It is an easy recipe which doesn't take so much time. This amazing and mouthwatering Osh takes few minute for the preparation and 60 minute for cooking. The aroma of this Osh make you more hungry and you couldn't stop yourself from having this. Ingredients to make Osh

  • 1 kg mutton
  • 5 onions
  • 2 tsp cumin seeds
  • 2 1/2 tsp ginger-garlic-green chilli paste
  • 3 tsp of dhania-jeera powder
  • 1 tsp turmeric powder and chilli powder
  • 1 1/2 tsp salt
  • 1/2 cup rice
  • 1 cup chopped coriander
  • 3 tbsp oil
  • 6 to 8 cups water
  • Equal quantities of the following-
  • 2 1/2 cups of Masoor dal Chana daal Moong dal
  • 2 1/2 cups of Black eyed peas (lobiya)

How to make Osh

  1. Soak the pulses for at least 4 hours if not over night. Cook the rice separately.
  2. Slice and fry the onions crisp. Drain oil & spread on tissue to absorb excess oil.
  3. In deep vessel heat oil on medium flame. Add jeera, and the ginger-garlic-green chilli paste and saute for a minute.
  4. Add mutton and stir fry for 5 mins. Add washed pulses and stir fry.Add dhania-jeera powder, haldi, chilli powder, 1 1/2 tsp salt and continue to sauté for 2- 4 mins
  5. Crush the fried onions & add to dal/mutton mix. Add 6-8 cups water. Put in pressure cooker, for 3 whistles, simmer till the meat is cooked
  6. When cooled, remove from the cooker to a deep pot. Add chopped coriander.
  7. Add the rice and simmer on low heat for 10 mins. You can add as much water as needed. It's nice to have it soupy.
