Ingredients to make Stuffed chilli pickle

  • 250 grams skinless split mustard seeds
  • 250 grams dry mango powder
  • 1 bowl coriander seeds
  • 1 bowl fennel seeds + 2 tbsp fennel seeds
  • 2 tbsp fenugreek seeds
  • 4 - 5 tbsp Nigella seeds
  • 4 tbsp carrom seeds
  • 3 bulbs of garlic peeled
  • 4 tbsp salt
  • 500 ml Mustard oil
  • 2 tbsp Turmeric powder
  • 500 gms red chillies

How to make Stuffed chilli pickle

  1. Cut the stalk of the chillies deseed it. keep it at a dry and hot place for at least 2 hrs so that it looses some of its moisture
  2. Roast fenugreek seeds, Nigella seeds, carrom seeds, coriander seeds and fennel seeds. Let it cool down. Roast 2 tbsp fennel seeds separately
  3. Make a paste of garlic.
  4. Grind the roasted seeds followed by skinless mustard seeds.
  5. Add all the ingredients in the mixing bowl along with dry mango powder, salt to taste, turmeric powder, 2 tbsp roasted fennel seeds and a cup of mustard oil.
  6. Mix all the ingredients well
  7. Now with the help of small spoon fill the masala into the chillies keep poking with the help of a small skewer or a small fork, so that the masala stuffs nicely into the chillies
  8. Pierce the stuffed chillies from outside to make holes into it, atleast 3-4 in each chillies
  9. Keep all the chillies into the jar. Pour the mustard oil into the jar
  10. Chilies will soak the oil in some time so if required add some more oil so that the chillies are dipped into it
  11. Keep it under the sun for a couple of weeks and then it will give a better taste
