Chole Puri

Ingredients to make Chole Puri

  • 250gm Chole (chickpeas) soaked overnight with ample of water
  • 3 cloves Pinch of rock salt 1 tsp asfateodia 1 tsp oil
  • 1 tsp ajwain 2 tsp cummin powder
  • 4 big onions finely chopped/ grinded
  • 3 big tomatoes finely chopped
  • 1 inch ginger grinded
  • 1 tbsp garlic paste
  • Pinch of turmeric powder
  • green chilli Paste approx 3 tbsp or as required
  • 1 tsp red chilly powder
  • 1 and 1/2 tsp garam masala powder
  • 1 and 1/2 tsp aamchur powder

How to make Chole Puri

  1. In a vessel soak Chole overnight with ample of water.
  2. In morning,removing water rinse chole.In pressure cooker,take water with Chole enough to level it.Add rock salt, ajwain,Asfateodia,Cloves and 2tsp oil.Pressure cook it letting it Whistle on full and thereafter on medium flame for 10min.
  3. Let cooker cool on its own before opening it.
  4. In vessel,taking 4 tbsp oil heat it.Saute Cummin powder,garlic paste.Add ginger paste. Adding onions with salt, saute on medium to sim gas flame till oil separates and gets totally dark brown.
  5. Now add tomatoes. Mix and again saute on medium flame till it blends to pureé.
  6. Add all dry ingredients ( except aamchur powder) one after another, in each steps.
  7. Now after drain Chole from cooker, add to dry gravy.Mix well.Sprinkle aamchur powder. Adding water,Boil for few minutes.
  8. Serve hot with bhature/puris with onion rings,
  9. Bhature,are made totally from Maida.Instead I prefer Puris.It's recipe found in another section.

My Tip:

Garnish with whipped cream. Serve piping hot.
