Ingredients to make Roasted potatoes

  • potatoes-10
  • salt- as per our taste
  • turmeric- 1/2 tsp
  • chilli powder- 2 tsp
  • For seasoning- mustard, cumic, split urid dal, channa dal, curry leaves.
  • oil- 1 tbsp

How to make Roasted potatoes

  1. Boul potatos in pressure cooker for 1 whistle
  2. Remove potatoes from water and let them rest in a plate.
  3. After 1 hour, peel the skin of potatoes and cut into medium size chunks.
  4. In a non stick pan, add oil and wait till it is very hot.
  5. Now add each pototo chunk separately into hot oil. Add only few at a time.
  6. Don't saute for 5 to 10 min.
  7. After 10 min, gently turn the pieces to other side.
  8. Let them fry till they reach a golden colour. Transfer them into a bowl.
  9. Repeat with other potato pieces and fry.
  10. Now in the non stick pan, add little oil and do seasoning and add our golden coloured potato chunks.
  11. Add salt, turmeric and chilli powder and them them roast for 10 min.
  12. Transfer them into a bowl and serve.

My Tip:

Dont add too much oil while frying. Less oil will result in crispy potatoes. Dont add all the potato chunks into oil at a time. Doing in batches will result in a perfect recipe.
