  • Brinjal 1 big
  • Minced Garlic 3 cloves
  • Tahini 1/4 cup
  • Lemon Juice 1/4 cup
  • Cumin 1 pinch
  • Salt to taste
  • Olive oil 1 tbsp
  • 2 tbsp chopped onion
  • 1 tbsp chopped carrot
  • 1 tbsp diced tomatoes seedless
  • Parsley for decoration

How to make Baked brinjal salad

  1. Heat grill pan, put brinjal and cook until it is soft, Then bake in oven for 15-20 minutes, take it out and cool it.
  2. Then remove skin, put in bowl, mash it and make paste.
  3. Then put tahini, garlic, lemon juice, olive oil, cumin and mix it nicely.
  4. Then put salt, onion, carrot and tomatoes and mix well
