Pineapple upside down Cake

Ingredients to make Pineapple upside down Cake

  • Plain flour- 1.5 cups
  • Powder sugar- 1 cup
  • Unsalted butter- 1/2 cup
  • Large eggs- 3units
  • Baking powder- 1 tea spoon
  • baking soda- 1pinch
  • Vanilla extract- 1tea spoon
  • Fresh Pinnapple juice- 1 table spoon
  • Round shaped pineaple slices- 3 to 4 units
  • Red cherry- 7/8 units(for garnishing)

How to make Pineapple upside down Cake

  1. In a mixing bowl take the unsalted butter(room temperature). Beat the butter very well with a beater.
  2. Add the powder sugar into it and beat well until it gets light. Add eggs one by one and again beat the mixture very well until frothy.
  3. Add the vanilla extract and pineapple juice and mix well.
  4. Now add the dry ingredients one by one. Add half of the plain flour and fold gently, add rest of the flour, baking powder, baking soda and fold very gently. Don't over mix.
  5. Preheat the pressure cooker.Put a handful of salt at the bottom of the cooker and place it on the oven with lid on minimum flame.Don't put the whistle.
  6. Now grease the baking tin with non stick spray/butter.sprinkle some flour into it. Now place the round shaped pineapple slices side by side at the bottom of the tin. Put the cherries in between of the pineapple slices.
  7. The decoration is completed. Now pour the cake batter into the pan and tap the pan lightly to make it even.
  8. Open the lid of the cooker,put a stand into it and place the cake tin into the cooker carefully. Put the lid on and let it bake for 45 mins.
  9. After 45 mins open the lid.insert a toothpick to check the cake, if it comes out clean the cake is done.
  10. Close the lid again and let the cake rest for 5 more mins.(stand by). Don't put on the flame this time.
  11. Take out the cake tin from the cooker and let it cool for some time. After 10 mins put a plate on the cake tin and turn upside down. The cake will come out on the plate. Enjoy the cake.

My Tip:

Keep the flame at minimum throughout the process
