Dharan Ji Kadi

Ingredients to make Dharan Ji Kadi

  • For the gravy - 2 onions, boiled and pureed
  • 3 tomatoes, pureed
  • 1 teaspoon ginger garlic paste
  • 2 Green Chillies, chopped
  • 2 teaspoon coriander powder
  • 1 teaspoon jeera
  • 2 cloves
  • 4 tablespoon oil
  • To garnish, green coriander leaves
  • For the Dharan- 2 cups chickpea flour
  • 1 onion, finely chopped
  • 3 tablespoon curd
  • oil to fry
  • 3 tablespoon oil
  • 1 tablespoon khus khus
  • Salt to taste
  • 1 teaspoon red chili powder
  • Water as needed

How to make Dharan Ji Kadi

  1. For the Dharan- Mix the besan, salt, onion, red chili powder, khus -khus, oil.
  2. Using curd, make a soft dough.
  3. Generally, rolls are made and boiled and then it is deep fried, after cutting into 1-inch pieces.
  4. But, I gave them a Tikki shape.
  5. So, make small Tikkis.
  6. Boil sufficient water in which these can be boiled.
  7. Boil for 7 to 10 minutes on medium flame and switch off.
  8. Let them cool completely.
  9. Then deep fry them.
  10. To prepare the base- Heat oil in a pan.
  11. Add in the jeera and let it splutter.
  12. Add the onion puree.
  13. Fry till color change.
  14. Add in ginger garlic paste.
  15. Add the tomato puree.
  16. Fry well.
  17. Add all seasonings, salt, whole masala
  18. Cook till done
  19. Add the water in which the Tikkis were boiled.
  20. Put in the Tikkis.
  21. Let cook till the desired consistency you need.
  22. Garnish and serve with ghee Phulkas.
My Tip: Its somewhat similar to gatte ki sabji, but with some changes that give it a unique flavor.
