ABOUT Savory Ragi Malt RECIPE

This is a typical recipie of coastal regions of Maharashtra and consumed during summer. It has the wholesome goodness of ragi with buttermilk and mildly flavoured with ginger and garlic. I have added mint and coriander also to this to make it a perfect coolant on a sunny day.

Ingredients Serving: 4

  1. Ragi flour 2 tablespoon
  2. Water 2 cups
  3. Garlic cloves 2
  4. Green chilly 1/2
  5. Black salt to taste
  6. Buttermilk 500ml
  7. Coriander leaves
  8. Mint leaves
  9. Ginger 1/2 inch
  10. Cumin powder 1 teaspoon

Instructions

  1. Make a smooth paste of ragi flour with little water
  2. In a pan boil 2 cups water. Add crushed garlic and green chillies to the water. Add black salt in water.
  3. When the water boils, slowly add Ragi paste and stir continuously so as to avoid lumps.
  4. Mix the ragi flour well in hot water
  5. Let the ragi paste boil and cook properly. It will thicken as it gets cooked.
  6. Keep on stirring continuously till it is cooked.
  7. Let the ragi mixture cool down completely. It will thicken further while cooling. Remember to stir in between to break any lumps
  8. Once cooled completely, slowly add buttermilk, cumin powder to it and mix well
  9. Make a fine mixture of ragi and buttermilk
  10. Chop coriander, mint leaves and grate ginger.
  11. Add coriander mixture into the ragi malt
  12. Mix well and serve this healthy drink.
