Key Lime Pie

Ingredients to make Key Lime Pie

  • Condensed Milk - 1 tin
  • Key lime juice - 2/3 cup
  • Cream - 150 ml
  • Egg yolks - 3 nos
  • Icing sugar - 1 tbsp
  • Digestive biscuits - 2 packs
  • Butter - 3 tbsp
  • Granulated sugar - 2 tbsp

How to make Key Lime Pie

  1. First, crumb the biscuits on a food processor or (put it in a strong plastic bag and bash it with a rolling pin). Mix in the melted butter and the granulated sugar. Press this mixture into a loose based tart tin and bake it in a preheated oven for 10 mints.
  2. Take a bowl and whisk in the egg yolks. Add the condensed milk and mix properly. Add the lime juice to it and again combine this properly.
  3. Pour the filling into the cooled biscuit base and put it back in the oven and bake for 20 mints.
  4. Remove from oven and cool it completely. Put it in the fridge for atleast 4 hours or overnight.
  5. Beat the cream along with one tbsp of icing sugar. Top with whipped cream and garnish with lime slices if desired.
