ABOUT Sev Ussal in Bread Bowl RECIPE

Little spicy, little sour with a tingling taste of garlic. It's a complete meal in itself.

Ingredients Serving: 3

  1. Big buns
  2. Bhujia
  3. Dried peas 1 cup
  4. Baking soda 1 pinch
  5. Oil 1 tablespoon
  6. Onion 1 big (optional)
  7. Puree of 2 big tomatoes
  8. Ginger 1 inch
  9. Green chilies 3
  10. Garlic 4-5 cloves (optional)
  11. Curd 2 tbsp
  12. Malai 1 tbsp
  13. Lemon juice 1/2 lemon
  14. Spices:
  15. Sambar Masala 1 tsp
  16. Red chili powder 1 tsp
  17. Coriander powder 1 tsp
  18. Turmeric powder 1/4 tsp
  19. Cumin seeds 1/4tsp
  20. Asafoetida 1/4tsp
  21. Sugar 1tsp
  22. Salt to taste
  23. Garnish:
  24. Coriander
  25. Tomato chopped
  26. Onion chopped

Instructions

  1. Soak the dried peas for 4-5 hours and then boil with little salt, sugar(1/2tsp) and soda.
  2. In a wok take oil and add asafoetida, cumin seeds.
  3. When cumin splutters add ginger-garlic and green chili paste and finely chopped onions.
  4. Sauté till onion is translucent and then add tomato puree and sauté it for 2 minutes
  5. Beat the curd and Malai together and then add it to the wok.
  6. Let this gravy boil till oil separates from it.
  7. Now add boiled peas, lemon juice, salt and water to it.
  8. Let this boil for 5 minutes. Now add sambar masala and remaining sugar to it. Your Ussal is ready
  9. Plating:
  10. Take a bun and make a hollow in it. Bake it for a few minutes till it crisps.
  11. Keep it on a plate and fill it half with Ussal and top it with lots of Bhujia (Sev). Garnish with chopped onion, tomatoes, and fresh coriander leaves.
