Brinjal / Began Ka Bharta

Ingredients to make Brinjal / Began Ka Bharta

  • Brinjal, medium size - 6
  • Onion - 1 large
  • Tomato - 1 large
  • Garlic cloves - 36
  • Curry leaves - 10
  • Oil - 2tsp
  • Green chilies - 2 chopped
  • Coriander leaves - 1/4 Cup
  • Coriander powder - 1 tsp
  • Cumin seeds - 1tsp
  • Turmeric powder - 1tsp
  • Garam masala - 1tsp
  • Salt to taste

How to make Brinjal / Began Ka Bharta

  1. Make small cuts in the brinjal and push the 3 garlic pods inside each cut. Roast on low flame from all sides. Roast onion on the other side of stove. Roast the tomato also and keep aside.
  2. Mash brinjal and tomato, cut onion and garlic.
  3. Heat oil in a pan, add cumin seeds,curry leaves, green chilies, garlic and onion, saute for 1 minute, add turmeric powder, coriander powder, red chili powder and stir.
  4. Add mashed brijal and tomatoes and cook for 1minute. Add salt and garam masala and cook covered for 1 minute.
  5. Turn off the gas and take it out i na serving bowl. Garnish with coriander leaves and serve.

My Tip:

Cook brinjal tomato and onion very well from all sides.
