Stuffed Brinjal Maharashtrian Style

Ingredients to make Stuffed Brinjal Maharashtrian Style

  • Brinjal - 7
  • Onion - 1 large, chopped
  • Tomato - 1 large, chopped
  • Green chilli - 2 Chopped
  • Curry leaves - 10
  • Oil - 4 Tsp
  • Garlic Cloves - 8
  • Ginger - 1 small
  • Coriander leaves - 1/2 Cup
  • Coriander Seeds - 2 tsp
  • Coriander powder - 2 tsp
  • Turmeric powder - 1 tsp
  • Chilli powder - 2 tsp
  • Grated coconut - 1/2 Cup
  • Peanuts - 6
  • Cinnamon small stick - 1
  • Black cardamom - 1
  • Sesame seeds - 1 tsp
  • Garam masala - 1 tsp
  • Salt to taste

How to make Stuffed Brinjal Maharashtrian Style

  1. Filling : Heat a pan, add 1/2 tsp oil, add peanuts, coriander seeds, green chilli, garlic, ginger, cinnamon, cardamom and cook until brown. Add grated coconut, mix it and when it browns switch off the flame. Cool and grind it in a mixer.
  2. Now heat 1 tsp oil add onions. When onions brown, add tomatoes cook well. Add turmeric powder, coriander powder, red chilli powder add the growd powder in this. Add salt and mix well. When done, take it out in a plate.
  3. Now take the brinjals and slit from the middle lengthwise, fill the stuffing one by one.
  4. In the same pan heat the remaining oil, add cumin seeds and curry leaves, now put all the brinjals one by one.
  5. Cook brinjal from all sides and add the gravy mix to it. Add 2 cup water mix salt and garam masala.
  6. Cover the lid and cook it for 7 to 8 minutes. Garnish with coriander leaves.
My Tip: Use only one pan to make everything, so that the flavors get incorporated well.
