Vegitabales dahi kanji

Ingredients to make Vegitabales dahi kanji

  • Yogurt – 2cup
  • Pumpkin (chopped) – 1cup
  • Garlic clove (crushed) – 6-7
  • Dry red chili – 2
  • paanch phoron [this includes fennel seeds, nigella seeds, fenugreek seeds, mustard seeds and jeera seeds]– 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Wheat flour- 1 tbsp
  • Curry leaves – 20
  • Water -1 & 1/2 cup
  • Oil – 1 tsp
  • Salt to taste

How to make Vegitabales dahi kanji

  1. Take a bowl. Add Yogurt and wheat flour. Mix thoroughly with a hand blender/ beater.
  2. Add half cup of water and beat thoroughly.
  3. Take a pan . Add chopped pumpkin, salt, turmeric powder and one cup of water and allow it to boil.
  4. Mash/ blend the boiled pumpkin.Add the beaten curd to the pumpkin and stir it in high flame . Stir till the curd is fully boiled. Now Change the knob of your gas stove to medium position.
  5. Cook for further 5-7 minutes.Heat oil in another Kadai/Pan. Add dry red chili, paanch phoran. Allow it to crackle.
  6. Now add garlic and curry leaves and stir for a while.Transfer the curd mixed with pumpkin to the Kadai/Pan. Mix thoroughly and allow it to boil for two minutes.
  7. Switch off the burner. Your Dahi Kanji is ready.
