RIPE MANGO CURRY

Ingredients to make RIPE MANGO CURRY

  • Ripe mangoes - 1 kg
  • Powdered jaggery - 1 1/2 tbspn
  • Salt - 1/2 tspn
  • Grind together : -
  • Grated coconur - 1 1/2 cup
  • Roasted dried chillies - 3
  • Mustard seeds - 1tspn
  • Seasoning : -
  • Mustard seeds - 1 tspn
  • Curry Leaves - 1 sprig
  • 1 tbspn cooking oil

How to make RIPE MANGO CURRY

  1. Wash the mangoes and peel off the skin. The peel must be squeezed to extract the mango pulp from it. Ultimately discard the peel.
  2. Combine the pulp and the skinned mangoes.
  3. Boil the ground paste adding to it a cup of water.
  4. Allow it to slightly thicken.
  5. Add salt to the gravy and dissolve the jaggery powder in it.
  6. When the gravy is thickened, add the skinned mangoes with the pulp into it.
  7. Allow it to simmer on a low fire for a while.
  8. Add the seasoning of spluttered mustard seeds and curry leaves in oil.
  9. Serve the mango curry with boiled rice.

My Tip:

Use small ripe pulpy mangoes.
