Chicken Vindaloo With Red Wine

Ingredients to make Chicken Vindaloo With Red Wine

  • Chicken 500 gm
  • Mustard seeds 1tsp
  • Coriander seeds 1tsp
  • Fenugreek seeds 1tsp
  • Cumin seeds 1tsp
  • Cinnamon stick 1 inch
  • Few green cardamom
  • Few dry Kashmiri chilies
  • Red wine 1/2 cup
  • White vinegar or apple cider vinegar 2 tbsp
  • Ginger Garlic paste 2 tbsp
  • 2 Chopped Onions
  • Salt to taste
  • Turmeric powder 1 tsp
  • oil for cooking
  • Jaggery 1 tsp

How to make Chicken Vindaloo With Red Wine

  1. Dry roast all the whole spices and ground to a fine powder
  2. To this roasted powder add salt and turmeric powder
  3. Make a fine paste with the vinegar
  4. Now marinate the chicken with this paste, half ginger garlic paste and red wine
  5. Keep the marinated chicken for 2-4 hrs in the refrigerator
  6. Heat oil in a wok
  7. Add chopped onions and fry till light brown
  8. Add rest of the ginger garlic paste
  9. Add salt
  10. Saute till oil separates.
  11. Add the jaggery
  12. Then add the marinated chicken and cook till oil comes out.
  13. Then add hot water and cook till the chicken is tender.
My Tip: Don't add too much vinegar as wine will be added
