Ingredients to make Gulkand Surprise

  • 1-2 tsp gulkand homemade
  • 150 gms mava (khoya) homemade
  • 1 tsp pistachios
  • 8-10 almonds
  • 4-5 tsp sugar ( I have used gud ki shakkar)
  • To make Khoya at home :
  • 1 cup milk powder
  • 1/2 cup ghee
  • Milk to make batter
  • To make Gulkand: Rose petals & sugar

How to make Gulkand Surprise

  1. To make the khoya, melt the ghee and mix all the listed ingredients to make a batter. Cover it and microwave for two minutes. Mix it well then microwave again for one more minute.
  2. To make the gulkand at home, wash and clean the rose petals. Take a glass bottle, put in the petals and sugar in layers. Keep this in the sun for about 8-10 days. Stir after 2-3 days in between.
  3. Take a heavy pan and place it on a low flame. Add the gulkand in it and keep stirring gently until it thickens a bit. Then let it cool down.
  4. Grate all the khoya and add the sugar, mix it well together. Put this mixture into a non-stick pan and put it on high flame for two minutes and mix well. Lower the flame and keep stirring until the mixture becomes thick.
  5. Allow the mixture to cool while stirring occasionally. Now take a ball of the khoya mixture on your palm and flatten it. Put the gulkand mixture, one almond, one pistachio in the middle.
  6. Roll it gently so that the gulkand mixture gets covered by the khoya mixture. Repeat the same process with all. Allow them to cool.
  7. Garnish with pistachios and serve cold.
