ABOUT Red rice Mexican RECIPE

This is my own recipe and very delicious

Ingredients Serving: 4

  1. 1 cup of rice
  2. 2 tbsp of oil
  3. 1 tbsp of garlic paste
  4. 2 medium tomatoes
  5. 1 large onion chopped
  6. 1/2 cup of tomato sauce
  7. 1 cup of chicken stock
  8. 1 tsp red kashmiri chilly powder
  9. Salt to taste

Instructions

  1. Wash the rice and soak in water about half an hour.
  2. Heat a pressure cooker add oil, then add garlic paste and saute for 1 min.
  3. Now add the chopped onion and saute few seconds.
  4. Add the chopped tomatoes, tomato sauce, salt, red chilly powder and cook until tomatoes become soft. Add a little bit of water. Mix well and add the soaked rice.
  5. Add in the chicken stock mix well. Cover the lid pressure cooker and cook for 1 whistle, simmer and cook for 10 minutes.
  6. When cooker fully cooled and pressure released. Open the lid and mix gently.
  7. Delicious red rice Mexican ready to eat.
